Cooking with Carrie Episode 7 – Pasta Primavera


Hungry for Health recipe

10 oz package wheat-free pasta

2 cloves garlic, minced

1 small red onion, sliced

12 shitake or button mushrooms, sliced

1 T fresh basil, minced

1 T fresh parsley, minced

1 T fresh oregano, minced

1 zucchini, cut into thin strips

2 red peppers, cut into thin strips

2 C small broccoli florets

3 T extra virgin olive oil

2 C tomato pasta sauce



Over medium heat, saute garlic and onion 2 minutes in 4 T water, stirring occasionally.  Add broccoli and cook one minute.  Add red pepper, zucchini, and mushrooms and cook for 5 minutes more.  Add herbs and olive oil, cover, and remove from heat.  Boil pasta according to directions.  Drain and combine with vegetables.  Toss well with warmed tomato sauce.

Yield: 5 servings
