Cooking with Carrie Episode 4 – Chickpea Salad
Ingredients
Hungry for Health recipe
15 oz can chickpeas, drained and rinsed
1/2 C chopped red pepper
1 medium cucumber, chopped
1 T balsamic vinegar
2 T extra virgin olive oil
1/4 tsp garlic powder
1/2 tsp dried oregano
sea salt to taste
pepper to taste
3 leaves Boston, bibb or butterhead lettuce
6 leaves Belgian endive
Recipe
Toss together all ingredients except lettuce and endive. Chill. Place on serving platter atop fan of lettuce and endive leaves.
Yield: 6 servings
