Cooking with Carrie Episode 9 – Thai Curry Chicken
Ingredients
Hungry for Health Recipe
4 boneless skinless chicken breasts, cut into bite-sized pieces
8 oz coconut milk
2 T curry
2 T honey
1 onion or 2 scallions, sliced
basil to taste
Recipe
Place all ingredients in wok and cook, covered, over high heat for 25 minutes. Stir occasionally. Serve over basmati rice.
Yield: 4 servings
