This family of vegetables provides nutrient powerhouses. They are high in compounds called indoles which help to reduce harmful effects of estrogens. Indoles have been shown to reduce breast, cervical, and colon cancer. The brassicas also contain sulforaphane, a compound which stimulates liver detoxification enzymes and helps the liver to remove free radicals and toxins. Sulforaphane inhibits cell mutation, and has been shown to reduce mammary tumors. One or two cups per serving two to five times per week is recommended for optimal protection from these vegetables. For best nutrient absorption, the brassicas should be eaten with a little high quality fat. Broccoli sprouts deserve special mention. As little as one ounce of broccoli sprouts is equivalent in nutritive value as 1 ½ pounds of broccoli.
